Like these Roasted Root Vegetables. It may be a little long for your typical weekday, but it is worth the wait. I have also served this alongside holiday meals as it goes wonderfully with turkey, ham, lamb and more. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients for Roasted Root Vegetables<\/h2>\n\n\n\n<p>I used potato, carrots and turnips for this version, but you can use any type of <strong>starchy root vegetables<\/strong> you like:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>beets (will tint the mixture pinkish)<\/li>\n\n\n\n<li>parsnips<\/li>\n\n\n\n<li>celery root<\/li>\n\n\n\n<li>sweet potatoes<\/li>\n\n\n\n<li>radishes<\/li>\n\n\n\n<li>fennel<\/li>\n<\/ul>\n\n\n\n<p>The <strong>herbs<\/strong> can also be varied. Because of the longer roasting time I would stick with woody herbs like rosemary, thyme, sage, oregano, and marjoram. Softer herbs like basil should be added towards then end of cooking. <\/p>\n\n\n\n<p>Other than that you'll just need some olive oil, fresh garlic, salt and pepper. With a mortar and pestle crush the rosemary leaves, garlic, peppercorn and salt.<\/div><\/li><li id=\"wprm-recipe-19803-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Drizzle olive oil over vegetables and toss thoroughly to coat. Add crushed spices and toss to coat thoroughly.<\/div><\/li><li id=\"wprm-recipe-19803-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Spread in a single layer on a baking sheet.
