Smith, my uncle, because it is now summer vacation for us here in the Humaciu household and I am in lazy mode. And more importantly, Uncle Clark is a far better writer (and cook, truth be told) than I can hope to be.<\/p>\n<p>So without further ado here is his incredibly delicious\u00a0looking, waist-line busting Fried\u00a0Jambalaya Balls with Gumbo Gravy. Oh my!<\/p>\n<p>-----<\/p>\n<p><b>Jambalaya Balls<\/b><br \/>\nClark H Smith<\/p>\n<p>(I dreamt up this concoction in my own tiny head and then I made the mistake of Googling it. Turns out there are <a href=\"http:\/\/sidedish.dmagazine.com\/2012\/09\/03\/deep-fried-jambalaya-wins-best-taste-in-2012-big-tex-choice-awards-competition\/\">some other evil geniuses<\/a> out there. However! They did not douse theirs with gumbo gravy!!! pan, brown the bacon to almost done. Add in onions and saut\u00e9 until translucent. Dump in the celery and bell peppers. Let \u2018em get good and hot. Make \u2018em sweat. Add the Zatarain\u2019s Jambalaya Mix and water as directed on package.<\/div><\/li><li id=\"wprm-recipe-21009-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Throw on the meats (see video).<\/div><\/li><li id=\"wprm-recipe-21009-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Stir. Cook jambalaya according to package instructions\u2026 with ONE exception. You\u2019ll want to stir the rice every 5 to 10 minutes (see video). Typically, one never stirs rice, but we want our jambalaya balls to stick together WITHOUT any filler (egg, cheese, drywall spackle, etc). So stir the rice occasionally, this will make it sticky.<\/div><\/li><li id=\"wprm-recipe-21009-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">When jambalaya is done, turn it out into a cake pan and let completely cool. COMPLETELY! When jambalaya is cool, form into balls between \u00bc to \u2153 cup volume. The smaller the ball the quicker it will cook, the less heat it will take out of the fryer, and the crispier it will be.&nbsp;<\/span><\/div><\/li><li id=\"wprm-recipe-21009-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Once balls are rolled, put them back in the cake pan and let firm up in the refrigerator, preferably at least 12 hours.<\/span><\/div><\/li><li id=\"wprm-recipe-21009-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Heat fryer oil to 350\u00b0.<\/div><\/li><li id=\"wprm-recipe-21009-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Dip chilled balls in egg wash and then in bread crumbs \u2013 whatever you like. I happened to have Italian seasoned breadcrumbs on hand and it was a nice touch. Fry balls four to six at a time\u2026 depending on your set up. I\u2019m not tryin\u2019 to tell anybody how to run their own dang fryer. Remove.<\/div><\/li><li id=\"wprm-recipe-21009-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Drench with gumbo gravy.<\/div><\/li><li id=\"wprm-recipe-21009-step-0-8\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Eat. EAT!!<\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Gumbo Gravy<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-21009-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">In the video (see video), I start with a quart of chicken broth. When I snack on shrimp, I save the shells to make shrimp broth. See video.<\/div><\/li><li id=\"wprm-recipe-21009-step-1-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">I make the gumbo gravy according to the recipe, everything except the meat.<\/div><\/li><li id=\"wprm-recipe-21009-step-1-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">For a finishing flourish, I thin-sliced some okra and fried it for a little garnish.
