Removing them from the pan wasn't the easiest, so you may want to opt for some pretty cupcake liners for easy removal.<\/p>\n\n\n\n<p>For the tangerine curd I used <a href=\"https:\/\/thatrecipe.com\/blood-orange-curd\/\" target=\"_blank\" rel=\"noreferrer noopener\">my adaptation of Ina Garten's citrus curd<\/a> method using whole eggs. It works like a dream and saves the step of separating eggs. If tangerine isn't your thing use your favorite citrus fruit and adjust the sugar if needed.<\/p>\n\n\n\n<p>The crust is a basic graham cracker crust with special ginger flavored graham oat cookies. Divide the remaining crumb mixture between the wells of a jumbo muffin tin or 8 wells of a regular muffin tin. <\/span><\/div><\/li><li id=\"wprm-recipe-31666-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Bake at 350\u00b0 for about 10 minutes. Place on a cooling rack to cool.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Tangerine Curd<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-31666-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Zest 1 of the tangerines using a citrus zester or box grater. Cut the tangerines in half, remove seeds and juice to get approximately 1 cup juice.<\/span><\/div><\/li><li id=\"wprm-recipe-31666-step-1-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Put the zest and sugar in a food processor fitted with the steel blade. Pulse a few times until the zest and sugar are mixed together.<\/span><\/div><\/li><li id=\"wprm-recipe-31666-step-1-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Add the butter and pulse to combine.
