He wants me to make them all the time now. I guess I had never made them for him before. But, I am grateful to have something else Sir Snubs a Lot will eat.<\/p>\n\n\n\n<p>My guys' favorite is probably still <a href=\"https:\/\/thatrecipe.com\/bacon-and-cheddar-potato-skins\/\">cheddar bacon potato skins<\/a>, but these are a close second.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Best Potatoes for Potato Skins<\/h2>\n\n\n\n<p>I like sturdy russet potatoes best for these. Yukon gold is okay, but I find they crumble a bit. <\/p>\n\n\n\n<p>For appetizers, I usually pull out the smallest potatoes in the bag to use for this. Not baby potatoes, the skin will be far too soft for the process.<\/p>\n\n\n\n<p>If all you have is larger potatoes, you can cut them in half before serving for more appetizer size pieces. <\/p>\n\n\n\n<p>However, if you are serving them as a side dish, bigger is better.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">What to do with the leftover potatoes<\/h2>\n\n\n\n<p>Once you bake the potatoes and scoop out some of the middle you will have leftover.<\/p>\n\n\n\n<p>I usually mash up the leftover potatoes with a little butter and milk while they are still warm, then pop them in the fridge for another meal. <\/p>\n\n\n\n<p>You could use them to top <a href=\"https:\/\/thatrecipe.com\/shephards-pie\/\" target=\"_blank\" rel=\"noreferrer noopener\">shepherd's pie<\/a>, turn them into <a href=\"https:\/\/thatrecipe.com\/vichyssoise-creamy-potato-and-leek-soup\/\" target=\"_blank\" rel=\"noreferrer noopener\">potato soup<\/a>, add them to bread or make some mashed potato pancakes (farls).<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Permission to choose your own toppings<\/h2>\n\n\n\n<p>Use what YOU like. <\/p>\n\n\n\n<p>If you only have slices of pepperoni instead of a chunk, use them (the mini ones would be great for this).<\/p>\n\n\n\n<p>If you like sausage instead of pepperoni, cook some up and add that.<\/p>\n\n\n\n<p>Use <a href=\"https:\/\/thatrecipe.com\/white-bean-alfredo\/\" target=\"_blank\" rel=\"noreferrer noopener\">alfredo sauce<\/a> instead of tomato sauce. <\/p>\n\n\n\n<p>Add veggies or mushrooms in addition to or instead of the meat.<\/p>\n\n\n\n<p>It's Pizza and Potato Skins.
