I also offer some alternatives:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>large shrimp&nbsp;(36\/40 or 26\/30) peeled and deveined<\/li>\n\n\n\n<li>canned cannellini beans (or Great northern or butter beans)<\/li>\n\n\n\n<li>escarole&nbsp;(or radicchio, spinach, or chard)<\/li>\n\n\n\n<li>fresh lime or lemon juice<\/li>\n\n\n\n<li>garlic&nbsp;cloves<\/li>\n\n\n\n<li>extra virgin olive oil<\/li>\n\n\n\n<li>smoked paprika (see below to make your own)<\/li>\n\n\n\n<li>dried oregano (see note below)<\/li>\n\n\n\n<li>salt and pepper<\/li>\n\n\n\n<li>freshly grated Parmesan cheese&nbsp;(optional for serving)<\/li>\n<\/ul>\n\n\n\n<p>The original recipe used <strong>dried oregano<\/strong>, the powdery stuff, not oregano leaves. You can go that route if that's what you have. I have several large oregano plants in my garden, so I tend to use either fresh or dried leaves from the plants.<\/p>\n\n\n\n<p>To use <strong>dried leaves<\/strong>, crush them between your fingers as you add them to the beans. <\/p>\n\n\n\n<p>To use<strong> fresh leaves<\/strong>, finely chop 1 tablespoon fresh oregano leaves before adding them to the beans.<\/p>\n\n\n\n<p>If you don't have <strong>smoked paprika<\/strong>, but want the lightly smoky taste, you can toast your own with plain paprika. Just pour some paprika into a small skillet and heat for a few minutes over medium low heat.
