I can always taste it. Blech! These pancakes get their natural color from the addition of beets. No, you don't taste them. You can use less if you are concerned, just note the color will be lighter.<\/p>\n\n\n\n<p>Some people object to the idea of sneaking in vegetables and not telling the family. You can tell them if you want to. My veggie\u00a0fearing son (it's an autism-thing) has no idea and I plan to keep it that way. He might start involuntarily gagging if I tell him. I just tell\u00a0him they are Pink Pancakes and he is thrilled.<\/p>\n\n\n\n<p>This recipe is adapted from <a href=\"http:\/\/amzn.to\/2maUUEn\" target=\"_blank\" rel=\"noopener noreferrer\">Jessica Seinfeld's recipe in Deceptively Delicious<\/a> (affiliate link). I added some whole wheat flour to the mix which not only gives it fiber but a bit of a nutty crunch.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients for Beet and Ricotta Pancakes<\/h2>\n\n\n\n<p>I am sure you can guess the ingredients from the name:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>baking mix or pancake mix<\/li>\n\n\n\n<li>whole wheat flour<\/li>\n\n\n\n<li>cooked beets (cook from fresh, or canned)<\/li>\n\n\n\n<li>ricotta cheese (or small curd cottage cheese or yogurt<\/li>\n\n\n\n<li>milk (dairy or non-dairy)<\/li>\n\n\n\n<li>eggs (or egg substitute)<\/li>\n\n\n\n<li>vanilla extract (or other extract like almond, rum, maple)<\/li>\n<\/ul>\n\n\n\n<p>For gluten free, chose a gluten free baking\/pancake mix plus extra for the whole wheat flour.
