Fried Green Tomatoes, <a title=\"Green Tomato Chow Chow\" href=\"https:\/\/thatrecipe.com\/2013\/07\/11\/green-tomato-chow-chow\/\">Green Tomato Chow Chow <\/a>or even <a title=\"Green Tomato Bread\" href=\"https:\/\/thatrecipe.com\/2013\/09\/11\/green-tomato-bread\/\">Green Tomato Bread<\/a> are all possibilities.<\/p>\n\n\n\n<p>But,\u00a0I just made a recipe that you may not have thought of trying before: Tomato Preserves.<\/p>\n\n\n\n<p>That's right, a sweet jam made with tomato instead of berries, stone fruit or just about any other fruit you would normally associate with jam.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Serving suggestions for Tomato Preserves<\/h2>\n\n\n\n<p>Tomato preserves can be served just like any other jam:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>on toast<\/li>\n\n\n\n<li>biscuits or scones<\/li>\n\n\n\n<li>cornbread<\/li>\n\n\n\n<li>with a charcuterie board<\/li>\n\n\n\n<li>with a cheese tray<\/li>\n\n\n\n<li>on a grilled cheese sandwich or burger<\/li>\n\n\n\n<li>on crostini<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">What kind of tomatoes to use for Tomato Preserves<\/h2>\n\n\n\n<p>I used ripe Roma tomatoes that were on sale at the store. But here's the great thing, you can use<strong> any<\/strong> tomatoes. Green, yellow, red. Heirloom, beefsteak, early girl, etc.\u00a0<\/p>\n\n\n\n<p>I would stay away from cherry or grape tomatoes because who wants to stand around and blanch the peel off of a pound of those. Not me, thank you very much.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">How to Blanch Tomatoes<\/h2>\n\n\n\n<p>In order to peel the tomatoes, put down the veggie peeler! Instead you want to \"blanch\" them: dunk them in boiling water for 30 seconds to a minute, then immediately into an ice bath. The soft thin peel sloughs right off.<\/p>\n\n\n\n<p>Here's a quick video demonstrating the procedure. Place in a pot of boiling water until skin begins to peel off. Immediately place in a bowl of ice water. Gently squeeze tomatoes by hand or with a wooden spoon to release juice. Add an equal weight of sugar. Let stand for 12 hours.<\/div><\/li><li id=\"wprm-recipe-22051-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">When ready to cook, place two metal teaspoons in the freezer.<\/div><\/li><li id=\"wprm-recipe-22051-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Drain juice into a large sauce pan. Boil until the syrup thickens and falls of a spoon in heavy drops. Approximately 20 minutes.<\/div><\/li><li id=\"wprm-recipe-22051-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Rough chop the tomatoes and add to the thickened syrup. Grate the lemon zest and add to the syrup. Cut lemon in half and squeeze juice into the syrup. Add the ginger or cinnamon.<\/div><\/li><li id=\"wprm-recipe-22051-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Boil mixture until thick for 20-30 minutes, stirring occasionally.<\/div><\/li><li id=\"wprm-recipe-22051-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">To test for doneness, remove one spoon from the freezer. With the spoon you used to stir the preserves remove a small amount of jam and pour into the frozen spoon. <\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Tilt the frozen spoon over the pot, if the preserves pour off in large thick drops it is done. If it pours off quickly, boil for another few minutes and retest with the other frozen spoon.<\/span><\/div><\/li><li id=\"wprm-recipe-22051-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Remove ginger or cinnamon.
