There is only one critic and he is&nbsp;a 3-year old boy. It was originally submitted by reader Sarah Brinkley. Sarah, if you ever read this and want me to take it down I will, but this recipe is so delightful and we make it often, I felt I had to share.<\/p>\n\n\n\n<p>This seems to be pretty similar to one served at Mimi's Cafe if you add nuts and raisins, but a whole lot lighter. I am not sure about the actual recipe, but the one in <a title=\"Top Secret Restaurant Recipes 2\" href=\"http:\/\/amzn.to\/2acwByK\" target=\"_blank\" rel=\"noopener\">Top Secret Restaurant Recipes 2<\/a>\u00a0calls for a cup of oil\u00a0and a cup of sugar plus molasses! eek!<\/p>\n\n\n\n<p>Served with a little bit cream cheese on top, we enjoy this for snack and breakfast.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients for Carrot Bread<\/h2>\n\n\n\n<p>Don't be intimidated by the long list of ingredients. They are just basic pantry ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>carrots<\/li>\n\n\n\n<li>whole wheat flour (or all purpose flour, or half of each)<\/li>\n\n\n\n<li>sugar<\/li>\n\n\n\n<li>canola or vegetable oil<\/li>\n\n\n\n<li>vanilla yogurt\u00a0(or plain yogurt and vanilla extract)<\/li>\n\n\n\n<li>eggs<\/li>\n\n\n\n<li>baking powder, baking soda, salt<\/li>\n\n\n\n<li>cinnamon, ginger, ground cloves<\/li>\n\n\n\n<li>pecans or walnuts, raisins (optional)<\/li>\n<\/ul>\n\n\n<div id=\"recipe\"><\/div><div Fold carrot mixture to flour mixture, stirring until just combined. Add nuts and raisins.<\/div><\/li><li id=\"wprm-recipe-19331-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Pour batter into an 8-inch loaf pan coated with cooking spray. Bake at 350\u2109 for 50 minutes or until a wooden toothpick inserted in the center comes out clean. Cool bread in pan for 10 minutes on a wire rack; remove from pan.
